Marrow, a neighbourhood butcher on Prospect Road
A neighbourhood butcher on Prospect Road. Whole animals from farms we know, cut to order. No rush.
Come in, have a chat. No rush.
Marrow is a small shop with a big bench. We buy whole animals from a handful of South Australian farms, break them down out the back, and cut whatever you're after while you wait. Thick, thin, boned, rolled, tied.
Not sure what to get? Tell us what you're cooking and how many are coming. We'll sort the rest, and tell you how to cook it.
The cold room
Our beef hangs on the bone for 28 to 45 days, at one degree, beside a wall of pink salt.
Water leaves and the flavour stays: deeper, nuttier, a little like good parmesan. Ask what's ready this week.

Prospect Road, Prospect. Park out the back. Dogs are welcome at the door, and usually leave with a bone.
Right. Let's wrap it up.
Wrapped and waiting.
Order by Thursday for the weekend. We'll have it wrapped, tied and named on the counter when you walk in.
Done. That's how it works.
A real shop would text you when it's on the counter. Marrow is an example, so nothing was sent anywhere.
